[Tatar UU](https://i.redd.it/i0vtqqpaj1431.png) -- since both the guy and the horse are nearly entirely clad in armor, I assume that they have a high pierce armor stat. Their specialty would be mounting pushes through enemy base while tanking damage from towers, castles and town centers. They would have less melee armor compared to knights, and unlike goth huskarls they wouldn't have a damage bonus against archers.
[Bulgarian UU](https://i.redd.it/czft2lu08k331.jpg) -- historically, blunt weapons were used as a [counter]( https://en.wikipedia.org/wiki/Mace_(bludgeon)#European_Middle_Ages#European_Middle_Ages)) to heavily armored soldiers. With that in mind I think that this unit's special ability is that their attacks ignore melee armor, making it powerful against units like knights, boyars and teutonic knights. To balance such a strong perk they would either have less attack, less armor or less health compared to knights.
