Something I don't get about army management

Hey everyone, I'm new at the game ( I'd say I have played something like 50 games in total, most of them with friends who are totally new to the game, so I couldn't really learn from them ) and lately I have watched some professionnal streams, tried to learn a few BO and I have started to play online.

For my level ( ELO ~ 850-900 ) I have an early game that is above average and a pretty solid eco. Actually most of the games I won were pretty short, and I tend to lose if the game gets to the post imp stage. I don't really know the reason but I think it's because I don't really understand how army works.

I've got a few questions about this aspect of the game :

- How many military buildings should I build ? I feel like I always get overwhelmed by the size of my opponent army. I tend to have 4-5 military buildings that I produce from but I don't know if this is enough

- How important is the counter system and the civ choice ? I can remember a few games where I have maxed out frank paladins and the enemy starts spamming halbs. Is it really worth it to invest something like 1000 gold to switch to archers or should I stick to my paladins ? This is just an example but I never really know if I shoud produce an upgraded unit that gets countered or just switch and lose a lot of resources to the upgrades of my new unit.

-How do I efficiently place an offensive castle ? I feel like it's either too far from my opponent ( and it doesn't do any damage ) or too close, and he just trebs it down safely. I've got a lot of trouble with pushing a base without losing a lot of resources
