Help planning my first build?

Hello all,

I plan to build my first PC (~$1500 CAD) and I am requesting some direction:

Current PC setup: Dell Latitude E6530 with i5-3340M @ 2.7GHz 8GB RAM Windows 7, 64-bit ‘Dual-monitors’ with a Dell 1704FPT (hey, does the trick)

Background: What I intensively use my PC laptop for is editing photos/video with Adobe products (Lightroom, Photoshop, a little Premiere) and my current setup isn't fast enough to keep up with my needs.

1) Just starting an application is painfully slow. 2) Building a single 1:1 previews takes about 10 seconds per image. 3) My PC crashes for about 5 minutes while Lightroom builds a DNG panorama. 4) Rendering multiple adjustment brush and spot removals makes the develop module super laggy. 5) Applying some filters in Photoshop can take forever. 6) Moving files around to backup drives or whatever takes forever.

I don't currently intensively game on my PC (does Age of Empires II count?). I rarely play Skyrim, GTA, Assassin's Creed on my PS4, but maybe would game more on a competent PC platform.

Problem: From a bit of research, it seems that the main of my problems can be solved by putting my OS/ Adobe programs/ current catalog onto an SSD and buying more RAM, fine that's easy.

The hard part for me is when I'm told “the building and rendering in Adobe is largely dependent on the processor” and there are just so many options out there.

I’ve read that the Coffee Lake CPU/mobo setup is the most current Intel offering (which I’m unjustifiably partial towards). So, should I go for a Coffee Lake to somewhat future proof myself?

1) Appropriate setup? Overkill? Underkill? Missing critical points? Any suggestions? 2) For my cpu cooler, the be quiet! Dark Rock 3, (seems nice because quiet is important for my editing) will that be cold enough when overclocking? - How do you know if it gets cold enough? There are $15 fans that get to the same rpms as more expensive fans… Also for the cpu cooler, the comments mention that it covers a ram slot which doesn’t sound good, is that a big problem? Should I just go for liquid cooled? Like the Deepcool CAPTAIN 120EX RGB instead?
3) I think I’m pretty far away from having to do SLi/crossfire right? No need to spend time researching that? 4) Is the memory that I chose bunk? Is DDR4-2133 sufficient? Should I go to an i5 to tap the DDR4-2666 memory speed? What would happen if I put like a DDR4-4500 or some shit? 5) I’ll be able to get all this in a mid tower right? People saying the beQuiet! is huge… 6) Suggestions on a monitor? (Asus - PB278Q 27.0" 2560x1440 60Hz Monitor) I need something relatively cheap and close to pre-colour calibrated, because I have a slight red-green colour deficiency.
