Hey, so I was going through some numbers for late game economy set up (as in how many vils.carts needed) for different unit types and figured it might be something worth posting here. The values I am using is 20 gold per min for trade carts, 22f per min for farmers, 26f per min for slav farms (f = farmer, c = trade carts). Assuming you are not making wood units 5-10 lumberjacks should be used for farms and making new buildings and replacing carts. Keep in mind that spain trade will change these numbers (but haven't looked at the numbers for it yet) (note you can check the economy tab in game to check your numbers)
Paladin for normal civ
51f 70c (this makes 18.7 paladin per min production) assuming you have around 5-10 lumberjacks this means can sustain 70+ paladin. Note it takes about 4 minutes for the economy remake the full 70+ paladin.
Berber camels
50f 60c (this makes 25 camels per min) - with 5-10 lumberjacks will have 80+ camels sustained.
note that camels are not as tanky as paladin so having more created per minute is a must, but you could maybe go with slightly less eco if you want and more army such as:
45f 54c (22.5 camels per min) - with some lumberjacks this makes about 90 camels. It takes about 4 mins for the economy to completely remake the 90 camels.
Camel archer
assuming 32w per min per lumberjack
40 lumberjacks, 54c (18 camel archer per min) - given that it is a ranged unit and less likely to be on the front line a smaller production amount should be fine, just make sure not to throw away large numbers if your low on res. Should sustain 100+ camel archer. Need at least 3 castles (ideally more) to keep up reinforcements.
Indian camels
(note sultans)
50f, 55c (20 camels per min) for 80+ camels sustained. Economy remakes full army in about 4 mins. Could also try a lower eco if have res saved up.
Slav Boyar
37f, 77c (19 boyar per min)
Note that thier farmers work fast, meaning that a large number of carts are needed compared to farmers - also given boyar higher gold cost. A rough rule to follow for slavs would be to have double the carts to farmers. Note need at least 4 castles for reinforcements (ideally more) Will sustain about 80 boyars.
Battle elephant (khmer, viet, burmese)
77f, 50c (14 eles per min) this can sustain about 60 elephants, so can remake in about 4 mins. Note that due to slower speed and better tanking it is probably better to have slightly less eco and slightly more army than this. e.g 70f, 45c might work better with 70+ army.
Eagles
25f, 70c (27.5 eagles per min) Can have about 100 eagles and can remake army in about 3.5 mins.
