What to do as Franks against 3 stable camels from Berbers?

I was playing as the Franks and my opponent playing as the Berbers went for full wall with defensive spears into 3 stable camels. I wasn't sure what to do in Castle. Do I open with knights? Pikes? Scorps? Monks can be helpful but with three stables producing the numbers rise quickly. I ended up doing knights and scorps but was soon outnumbered and died after taking a bad engagement. The pike transition was too late. What should I do?

My other concern is that if I go pikes my opponent can easily add in some scorps or skirms.
