Four civs (Portuguese, Spanish, Turks, and Koreans) have gunpowder UUs, and three of them are classified as gunpowder civs. All of them have very strong Universities as well: Koreans have everything, Turks and Portuguese miss one tech, and Spanish only really miss two because of their civ bonus. It looks like being smart and using gunpowder are important parts of the civ.
So, what if each of them had access to Chemistry in Castle Age? This would play into the flavor of the civ and give each a mild buff. All four civs are below 50% winrate on aoestats and could use a boost. Note that this would not enable Imperial Age units: it would just give +1 attack as usual and save a bit of time once they reach the next age. Because of this and it's cost, I think you would always research Bodkin Arrow first and there would be times when you wouldn't research it in Castle Age, except on the way up to Imperial.
